👩🍳 Step-by-Step Recipe for Chole Bhature
Part 1: Preparing the Chole (Spiced Chickpeas Curry)
- Soak & boil chickpeas: Soak 1 cup Kabuli Chana overnight. Drain and rinse. Pressure cook with 3 cups water, 1 bay leaf, 1 cinnamon stick, 2 cloves, 1 black cardamom (optional), and 1 black tea bag for 5–6 whistles until soft. Remove the tea bag after cooking.
- Prepare the masala base: Heat 2–3 tbsp oil in a pan. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until golden brown.
- Add ginger-garlic paste and slit green chilies; sauté until fragrant.
- Add pureed tomatoes; cook on medium heat until oil separates from the masala (10–12 minutes).
- Mix in turmeric, red chili powder, coriander powder, and salt; cook for another 5 minutes.
- Add boiled chickpeas along with the cooking water. Mash some chickpeas slightly for a thicker gravy.
- Simmer on low for 15–20 minutes to let flavors blend.
- Finish by adding amchur (dry mango powder) and garam masala. Garnish with chopped coriander leaves.
Part 2: Making the Bhature (Fluffy Fried Bread)
- In a large bowl, mix 2 cups all-purpose flour (maida), 2 tbsp semolina (optional for crispness), ½ tsp baking soda, and ½ tsp salt.
- Add 2 tbsp yogurt and 1 tbsp oil. Mix well.
- Gradually add warm water and knead into a soft, slightly sticky dough.
- Cover the dough with a damp cloth and let it rest for 2–3 hours.
- Divide dough into equal-sized balls. Roll each ball on a floured surface into a medium-sized oval or circle, about 4–5 inches in diameter.
- Heat oil in a deep frying pan. Slide one bhatura at a time into hot oil.
- Press gently with a slotted spoon to help it puff up.
- Flip and fry until both sides are golden brown and cooked through.
- Drain on paper towels and serve hot.
